Have you tried the famous Khajuri puff? Most commercially available puff/khari and biscuits contain a vegetable fat called Shortening. They are 100% vegetable fats which are in solid form and can be stored in room temperature, their slip melting point (SMP) is 36-39 degrees Celsius. It is used in making crumbly pastry and other food products. The term shortening refers to alternative to Ghee and Margarine is an alternate to Butter. Shortenings do not contain any moisture however Margarines contain moisture. After the invention of hydrogenated vegetable oil, shortening came almost exclusively to mean hydrogenated vegetable oil.

In the modern kitchen, shortening refers to hydrogenated vegetable fat/oils. Shortenings are most made from vegetable oils like soya bean, cotton seeds, or refined palm oils. These vegetable oils are generally in liquid form in normal room temperature. Common types of vegetable fats available and mostly consumed in Nepal for industrial or any use are sunflower oil, coconut oil, corn oil, palm oil, etc.

Like animal fats, vegetable fats are also a mixture of triglycerides. These fats have certain benefits over animal fats, some of the benefits are:

  • Slows ageing factor in human
  • Prevents cancer
  • Decrease in risk of heart diseases
  • Decrease in risk for breast cancer
  • Helps to boost immune system
  • Improves metabolism
  • Helps to promotes cell growth

Vegetable oil such as coconut oil can be used in food industries for frying, manufacturing of soap, manufacturing of methyl esters, fatty acids, and fatty alcohol which are raw material for detergents, emulsifiers and pesticide.

RBD palm kernel olein is a refined, bleached, and a deodorized vegetable oil which can be used as a cocoa butter replacer, soft fillings, in ice-creams, used as frying oil in various snacks industries. Palm Oil comes in 20 litre jerkins during summers and in 20 kgs Bag in Box (BIB) cartons to avoid the freezing of the product in winters.

Sunflower oil is another vegetable oil obtained by pressing of sunflower seeds commonly used in food for frying purpose and in cosmetic formulations as an emollient.
